As elegant as Serge Hochar himself, the man behind Château Musar, this blend of cabernet sauvignon, carignan and cinsault is lithe yet firm. The fruit feels autumnal, in shades of rust red and ocher spice, and is saturated with a spicy, foresty fragrance. It's delicious now, ready for game birds scented with juniper berries, and should live on for another decade.

Nuanced by cherries and spice, it is quite delicious...The ’00 is the powerhouse bruiser, the most rustic, while the Hochar is the approachable, easier wine. This is the one in the middle, arguably the best balance of fruit and power. On the downside, this is as gamey and funky as the 2000, but the balance is different, the wine seeming fruitier and fleshier, not quite as austere. Depending on your taste, you may find that a good thing, or prefer the more powerful and intellectual 2000. This is still powerful, I hasten to add, with drying notes on the finish, but the fruitiness melds beautifully with the barnyard notes, and it is nicely supported by the tannin rather than overwhelmed. As with the 2000, this should age well, although the 2000 should age longer, and this will be a wine some will love, and some will find has too much barnyard. Personally, I enjoyed it a lot, and was just imagining how it would work with venison. Drink now-2020.

The 2004 Chateau Musar is an equal blend of Cabernet Sauvignon, Carignan and Cinsault. This is a rather civilized, laid back Musar... Its balance, combining the nice fruit, elegant mid-palate, persistent finish and backbone, gives it a tightly wound, precise and focused demeanor. The tannins are not completely integrated, but not overly hard. They provided some welcome grip and vibrancy and never overwhelmed the wine. In the long run, they should serve this wine in good stead. Overall, it is an exceptionally graceful, somewhat modern and restrained Musar, bright, with that silky texture I saw in the Hochar reviewed this issue, while adding those layers of concentration. The cherry on top is the intensity of fruit flavor – bursts of delicious and juicy fruit on the finish, admittedly nuanced by some of the gamey notes I see here so often. Call it raspberry flavored, though, because the fruit is delicious. The gamey notes were in fact moderate and, at least for my taste, not an issue. As this rather subtle Musar aired out, I liked it more and more. I’ve had Musars that were bigger, burlier, more rustic and more astringent. Here, the subtle start was unremarkable, but it gathered steam, showed remarkable finesse and then won me over. This will certainly do better with food. Drink now-2021.

農曆九月圓臍,雌蟹當食,肥美黃膏滿瀉,適宜飲用略帶甜味的酒配合,因為蟹膏帶甜香,選擇乾身酒卻會凸顯苦澀;大閘蟹膏豐油潤滑,輕身酒「不夠斤兩」,兩者互碰,酒會被比下去;選飲紅酒也容易出問題,蟹的鮮味與酒中丹寧衝突,可會湧出腥味。所以,理想的大閘蟹的配酒是具備複雜性和帶甜味的中等酒體酒,Kopke Reserve Tawny Porto 會是不俗的選擇,而且夠貼地!

這支Tawny Port呈茶褐色,從杯頂中心往杯底看,輕帶半點橙紅,而邊緣則已呈淺啡色,這是從紅葡萄酒經過木桶陳釀氧化而成Tawny Port的必經過程。說到其香氣,有較成熟的堅果及乾花等氣味,剛開瓶時,除較明顯「攻鼻」的酒精(20%)外,亦散發陣陣的類同中國黃酒(花雕酒)氣味,芳醇誘人,大閘蟹"醉"愛!

Kopke 成立於1638年,是最古老的波特酒品牌,有近4個世紀的成功經驗。

Taylors 是葡萄牙最出名的Port wine 品牌之一,Vintage Port是代表作,只有在靚年份才當做。在Robert Parker 的評分中,1992年和1948年的vintage port都獲得了100分的滿分, 2000年份98分。08年7月在非官方評分公報Hedonists Gazette俾2003年份100分: “which is pretty much over-kill for me. The 2003 Taylor Fladgate Vintage Port improved each time I raised it to my nose or mouth. It displays a black color and a salty, graphite-laced nose packed with sweet black fruits that is reminiscent of a stellar vintage of Chateau Latour. With air, notes of molasses, burnt sugar, spices, and jammy plums emanate from the glass. Full-bodied, hugely dense, immensely rich, as well as thick, this behemoth is also amazingly balanced and harmonious. Raisins, molasses, licorice, black cherries, plums, and a distinctive note of violets are found in its complex, seamless character. Its interminable finish reveals additional notes of chocolate, kirsch, red as well as black currants, dark cherries, and rose blossoms. Armed with exceptional power, depth, and purity, this Taylor will proudly stand shoulder to shoulder with the finest ever crafted by the Fladgate Partnership. Projected maturity: 2035-2060.

Tasting Note: “Kirsch, black cherry, dark chocolate and cassis all abouund on the nose and palate. This is enticing and very plush with a good cherry and damson fruit core. Granular with ripe tannins and although there is clearly high levels of glycerol and sweetness of fruit it is all managed and held in check. The dollop Malbec gives a black pepper and spicey edge to the wine, the Merolt giving weight and roundness and the Cabernet Sauvignon keeping the structure”.

Series M takes its name from the Malbec and Merlot which predominantly define the style of this wine. Series M is sensuous wine with a firm core structure for aging. Malbec provides its black fruit aromas and fleshy texture, Merlot adds softness and red fruit aromas, and Cabernet Sauvignon provides structure.

About Vilafonte:
Vilafonté is the first American and South African joint wine-making venture within the global wine community. This ground-breaking red wine project is a partnership between a well respected group of 'quality driven' wine specialists from South Africa and the United States. The name, Vilafonté, derives from the primary soil type of the 100 acre estate, whose character forms the foundation of the wines.

Zelma Long is Head Winemaker for the Vilafonté project. Zelma is one of America's best known winemakers. One of the first women to study enology and viticulture at U.C. Davis, she began her winemaking career at Robert Mondavi Winery, rapidly working into the Chief Winemaker position.

Vilafonté's General Manager is Michael Ratcliffe. Mike qualified as a business major before attending the University of Adelaide. Mike is Managing Director of his family estate, Warwick which is recognized as one of South Africa's foremost wine estates.

Phil Freese is head 'wine-grower' and creator of the Vilafonté vineyard which he calls "Different by Design". Phil spent 13 years as Robert Mondavi’s Vice-President of Wine Growing. Phil designed the first Opus One vineyards, and initiated the remote sensing project with NASA that has spawned a new wave of tools for viticulture analysis and quality enhancement.
